Côte du Boeuf Steaks are Rib Eye Steaks with the Rib bone left in. The bone not only looks spectacular on the plate, it also give up its flavour during cooking and also protects the meat from direct heat when cooking over coals. Our native breed beef is grass fed which gives it particularly good marbling in the meat. All our roasts are from British native breeds. We dry age it for a minimum of 28 days with Himalayan Rock Salt.

Preparation & Use

Cooking Instructions: Remove the steaks from the fridge, pat dry and allow to reach room temperature. Pre heat a griddle pan or heavy based frying pan until it sizzles when you add a drop of cooking oil. Rub the steaks with cooking oil and season with salt and pepper. Cook on a high heat only turning the steak after a rich, golden crust has formed, then reduce to medium heat. Continue cooking, turning regularly until cooked to your liking. Leave to rest for 5 minutes in a warn place before carving.
