Taste Tradition Pork Loin Joint
A classic British roasting joint. Pork Loin is a lean cut but the traditional breeds of pork we farm ensures a good level of fat between the lean and the pork skin. During cooking this allows the fat to baste the pork and also creates amazing crackling.

Bring the Pork out of the fridge and bring to room temperature. Scald the pork rind by pouring over a full kettle onto the skin. Season the pork well with salt and pepper. Place the pork skin side up into a suitable roasting dish. Place in centre of oven and roast at 220ºC for 20 minutes then reduce the temperature to 180ºC then continue roasting for 40 minutes per 500g reaching a core temperature of minimum 75°C.
