Ready to Cook: YesBring the Pork out of the fridge and bring to room temperature. Scald the pork rind by pouring over a full kettle onto the skin. Season the pork well with salt and pepper. Place the pork skin side up into a suitable roasting dish. Place in centre of oven and roast at 220ºC for 20 minutes then reduce the temperature to 180ºC then continue roasting for 40 minutes per 500g reaching a core temperature of minimum 75°C.
