Turkey Bonbons Recipe

TURKEY BONBONS

INGREDIENTS
FOR THE BONBONS
200g mashed roast potatoes
2 sliced spring onions
125g diced cooked turkey
25g chopped chestnuts
1 egg yolk (keep the egg white for the coating mix)
Salt and pepper to season
FOR THE COATING
50g plain flour
2 beaten eggs plus 1 egg white
25g Panko breadcrumbs
50g sage and onion stuffing mix (pulse until smooth)
FOR THE SPICY CRANBERRY MIX
50g cranberry sauce
1/4 tsp chilli flakes
METHOD
- Preheat the oven to 200⁰C/ fan 180°C/ gas mark 6.
- In a bowl, mix together the mashed roast potatoes, sliced spring onions, diced cooked turkey and chopped chestnuts.
- Add 1 beaten egg yolk to bind the mixture and season to taste.
- Shape the mixture into small balls and lightly coat with plain flour.
- Mix together the Panko breadcrumbs and the pulsed sage and onion stuffing mix. Roll each bonbon through the beaten egg, then through the Panko breadcrumb and sage and onion stuffing mix.
- Place the balls on a baking tray and bake for 8 minutes, or deep fry for 4 minutes.
- Make the spicy cranberry by mixing the cranberry sauce with the chilli flakes and serve alongside the hot bonbons.
CHEF'S TIP
Make this veggie by swapping out the turkey for roast chopped mushrooms! Leftovers should be cooled and then stored in the refrigerator as soon as possible.
