The Boho Baker's Spiced Apple & Brown Butter Cupcakes

THE BOHO BAKER'S SPICED APPLE & BROWN BUTTER CUPCAKES

INGREDIENTS
115g unsalted butter
115g caster sugar
115g self-raising flour
1 tsp baking powder
2 medium eggs
FOR THE FILLINGS
1 cooking apple, peeled and cored
1 1/2 tbsp unsalted butter
1 1/2 tbsp brown sugar
1/2 tsp cinnamon
1/4 tsp ground ginger
Pinch of nutmeg
Pinch of salt
FOR THE FROSTING
225g icing sugar
90g unsalted butter
3 tbsp milk
150g caramel (from a tin)
Sprinkles
METHOD
- Preheat the oven to 160°C / 140°C Fan / Gas Mark 3.
- Gently heat the butter until golden brown. Leave to cool for 5 minutes
- Whisk together the caster sugar and brown butter. Sift in the flour and baking powder before stirring in the eggs. Divide between 12 cupcake cases and bake in the oven for 20-25 minutes.
- Chop the apple into 1cm pieces and toss it in a pan along with the butter, brown sugar, spices and salt. Cook for 10 minutes, stirring intermittently, until the apple has softened.
- Scoop a large spoonful of sponge out of the centre of each cupcake and replace with a serving of spiced apples.
- Whisk together the icing sugar, butter, milk, and 2 tbsp of the tinned caramel. Pipe the frosting on top of the cupcakes and drizzle with the remaining caramel. Finish with sprinkles and serve.
