Get Ahead Christmas Gravy Base

1 onion, chopped

1 carrot, chopped

1 celery stick

2 garlic cloves

25ml vegetable oil

1kg chicken drumsticks

1tbsp flour

1 large vine tomato, chopped

2 bay leaves

1 sprig thyme

1 Ltr True Foods chicken stock


  1. Pre heat the oven to 200°C/180°C Fan/392°F/Gas Mark 6.
  2. Wash and chop the onion, carrot and celery, leaving the skins on to add flavour. Place in a large roasting tin with the garlic, vegetable oil and chicken drumsticks.
  3. Roast in the oven for 30 minutes until golden.
  4. Sprinkle with flour and add everything to a large saucepan including all the fat.
  5. Add the chopped tomato, bay leaves, thyme and stock and bring to the boil.
  6. Simmer for 30 minutes and pass through a sieve, pressing all the bones and veg to extract as much sauce as possible.
  7. Allow to cool and freeze, this can be made 1 month in advance.
  8. Add this is to your turkey roasting juices and reduce to your required thickness. Season to taste.


Finish with some chopped sage, chopped chestnuts and a tablespoon of cranberry sauce.
