BOXING DAY TURKEY QUESADILLAS

WITH CHESTNUTS & CHEESE

INGREDIENTS

8 small flour tortillas

150g leftover turkey, shredded

150g grated Cheddar cheese

4 spring onions, finely sliced

2 jalapeño chillies, finely sliced

Handful of chopped chestnuts

Salsa

Sour cream

METHOD

1. Mix together the grated Cheddar, spring onion, turkey, jalapeños and chestnuts in a bowl.

2. Place a mound of the mixture onto each tortilla and fold until you have 8 filled half-moons.

3. Heat up a non-stick frying pan, place 2 quesadillas in the pan and dry fry for 2 minutes until golden.

4. Turn and repeat until the cheese starts to melt.

5. Keep them warm until they are all cooked.

6. Serve with salsa and sour cream.

 

CHEF'S TIP Don’t skimp on the filling. Make them nice and full for extra ooziness. Any cheese works with this, try it with slices of Brie!
