Cooking Instructions:

Minced Beef: Heat a little oil in a pan until hot. Remove mince from packaging and add to pan. Brown the mince, stirring frequently for 4-6 minutes. Reduce heat to medium and continue until cooked. As this point the browned mince can be transferred to a casserole dish. Oven: Add your preferred vegetables and stock to casserole dish. Place in a pre-heated oven at 180°C until thoroughly cooked.

Diced Beef: Heat a little oil in a large pan until hot and brown the cubes for 2-3 minutes, turning occasionally. Transfer to a casserole dish. Oven Add your preferred vegetables and stock to casserole dish and cover. Place in the centre of pre-heated oven for 2 hours 30 minutes until tender.

Beef Braising Steak: Heat a little oil in a large pan until hot and brown the slices of beef for 2-3 minutes on each side. Transfer to a casserole dish. Oven Add your preferred vegetables and stock to casserole dish and cover. Place in the centre of pre-heated oven (160°) for 2 hours 30 minutes until tender.

Chicken Fillets: Oven - Pre-heat oven to 180°C. Place fillets on a baking tray, spread evenly and cover with tin foil. Place in the centre of the oven for 20 minutes. Remove tin foil, turn once and cook for further 15-20 minutes. Grill - Pre-heat grill to medium heat. Brush fillets with a little oil and place under grill for 25-30 minutes. Turn once.

Pork Belly Pre heat oven to 200°C temperature fan assisted or 215°C without a fan. Bring the Belly Pork out of the fridge and bring to room temperature. Scald the pork rind by pouring over a full kettle onto the skin. Season the pork well with salt and pepper. Place the pork skin side up into a suitable roasting dish. Place in centre of oven and roast for 20 minutes then reduce the temperature to 180°C then continue roasting for 40 minutes per 500g reaching a core temperature of minimum 75°C. Top Tip – Pork Belly often suits being cooked for longer and at a slightly lower temperature than other cuts of pork. This allows time for the meat to become tender and pull away from the bone easier.

Free Range Chicken Pre-heat oven to 200°C/Fan 180°C. Place the chicken in a suitable roasting tin and season. Place in centre of a pre-heated oven and cook for 20 minutes per 500g PLUS an extra 20 minutes, basting occasionally. If breast browns too quickly, cover with foil. Ensure the chicken is thoroughly cooked and the juices run clear before consumption.

Lamb Shanks Pre heat the oven to 145°C. Season the Lamb Shanks with salt & pepper. Brown the shanks on all sides by frying in a little oil and set aside. In a casserole dish, fry your preferred vegetables (chopped finely) until soft. Add stock and / or wine and return the shanks to the pan. Cover with a tightly fitting lid. Cook in the oven for 3 to 3½ hours. When cooked the lamb should be very tender and easily fall away from the bone.
