A classic British roasting joint. The traditional breeds of pork ensure a nice level of fat between the lean meat and the pork skin. During cooking this allows the fat to baste the pork and also creates amazing crackling. The rack is French trimmed with only the rib bones remaining which makes for easy carving.

Preparation & Use
Cooking Instructions:
Oven: Take the pork rack out of the fridge and allow to sit at room temperature for 30 minutes. Pre-heat the oven to 220ºC. Remove your pork rack from the packaging and pat dry. Season with oil, salt and any seasoning of your choice. Cook the pork rack for 20 minutes at 220ºC then reduce to 180ºC and cook for 20 minutes per 450g of meat. Remove from the oven once cooked and wrap in foil to rest for 15 minutes. Carve, serve & enjoy!
