A classic British roasting joint. The traditional breeds of pork ensure a nice level of fat between the lean meat and the pork skin. During cooking this allows the fat to baste the pork and also creates amazing crackling. The rack is French trimmed with only the rib bones remaining which makes for easy carving.

Preparation & Use
Cooking Instructions:

Remove your Pork Loin from the packaging, pat dry and bring to room temperature. Preheat your oven to 210°C for fan assisted or 220°C for ovens without a fan. Scald the Pork skin by pouring a kettle full of boiling water over the joint on a wire rack over the sink then leave to dry. Choose a large, heavy-based roasting tray, ideally with deep sides and handles for easy movement. Season with good quality fine sea salt rubbed into the skin, just prior to cooking place the pork skin side up onto the roasting tin. Place in the centre of the oven and roast for 25 minutes, then reduce the temperature to 180°C for fan assisted or 190°C for ovens without a fan. Continue roasting for 20 minutes per 500g or until reaching a core temperature of 72°C. Remove from the oven, put onto a clean tray and keep warm by covering with a sheet of tin foil and a clean tea towel. Rest for a minimum of 20 minutes before carving.
