Preparation & Use
Cooking Instructions: Rafis Vindaloo (hot) - Empty the pack into a pan with 300ml water, 400g (tin) chopped tomatoes, 2 tbsp tomato puree, 2 tbsp cider vinegar and 2 tsp sugar. Simmer for 5 minutes. Add 1kg ingredients of your choice. Mix well, cover, and gently cook. Season and garnish with coriander leaves. Rafis Phaal (hot) - Empty the pack into a pan with 300ml water, 60g coconut cream, 400g (tin) chopped tomatoes and 1 tsp sugar. Simmer for 10 minutes. Add 1kg ingredients of your choice. Mix well, cover, and gently cook. Season and garnish with coriander leaves. Rafis Kashmiri Roasts Pack (hot) - Peel, boil and drain 1kg potatoes or other root veg. Add 100ml oil to a roasting tray. Add the contents of the pack and the veg to the oil, season with salt and mix until the veg is evenly coated. Roast in the oven for around 45 minutes. Rafis Saag Aloo (hot) - Boil 300g small new potatoes (or peeled and diced larger potatoes) and drain. Heat 2 tbsp oil in a pan and fry the contents of the pack and 1 chopped onion over a medium-high heat for 3 - 4 minutes. Add the cooked potato, 200g chopped spinach, 2 fresh tomatoes and a pinch of salt, then fry till the spinach is tender. Season and cook for a further 2 minutes. Garnish with coriander. Rafis Chilli, Garlic & Coconut Pickle - Heat 1 tsp of sunflower oil in a pan, add 20g of sliced garlic and saute for 2 minutes. Add sachet 1 (coconut) and mix well, remove from heat and allow to cool. In a blender add the garlic, salt and coconut with sachet 2 (chilli powder) blend till smooth. Will store in an air tight jar for up to 2 months. Rafis Tandoori Masala (hot) - Empty the pack into a large bowl with 200g yoghurt and a pinch of salt. Add 1kg ingredients (e.g. chicken drumsticks, cubes of paneer or chunky veg) and mix well. Leave to marinade for 1 hour. Cook on the BBQ or grill for 15 - 25 minutes depending on your ingredients, turning frequently to ensure even cooking. Rafis Onion Bahjia (hot) - Empty pack into a large mixing bowl with one finely sliced onion (or other grated/sliced veg) and season. Gradually add 125ml water, mixing it well until the batter is smooth and thick (no need to use all the water). Drop tablespoons of the mixture into medium-hot oil and fry until golden brown. Drain, place on kitchen paper, and serve.
