Rafi’s Bombay Potato (mild)

This is our ‘go to’ spice blend, which is fantastic with potatoes, but you can use it with any firm vegetables.

Rafi's Bhajia Pack (medium) 

The classic Indian snack to make fresh at home! Keep it traditional with finely sliced onion or throw caution to the wind with freshly grated courgette, earthy beetroot or chunky slices of par-boiled new potatoes.

Rafi's Mushroom Bhajee Pack (medium) 

An earthy side dish in a thick, comforting tomato sauce. Not partial to mushrooms? This dish works just as well with roasted butternut squash or sweet potatoes.

Rafi's Tarka Dhal Pack (mild) 

Soft, satisfying lentils with earthy spices and garlic tempered in hot oil. Try adding a dash of lemon juice for a tangy dhal or a finely chopped fresh tomato for a more savoury edge.

Rafi's Bhajia Pack (Medium) 100g - Gram Flour, Spices, Asafoetida (Rice Flour, Gum Arabic, Asafoetida, Turmeric), Baking Powder (Sodium Bicarbonate, Sodium Acid Pyrophosphate, Edible Starch), Chilli Powder.

Rafi's Mushroom Bhajee Pack (Medium) 30g - Onions (Onions, Vegetable Oil, WHEAT Flour, Salt), Garlic Flakes, Spices, Fenugreek Leaves,Chilli Powder.

Rafi's Tarka Dhal Pack (Mild) 180g - Mixed Lentils (Toor, Massoor, Moong, Chana), Garlic Flakes, Spices (contains MUSTARD), Asafoetida (Rice Flour, Gum Arabic, Asafoetida, Turmeric), Dried Chilli, Curry Leaves.

Preparation & Use
Cooking Instructions:

Rafi's Bombay Potato Pack (Mild) - You will need 500g potatoes, 1 onion, 2 tbsp oil, optional garnish lemon juice, chopped tomato and coriander.  Boil 500g of potatoes or other firm vegetables until cooked (raw vegetables can also be used). Drain and leave to cool. Gently heat 2 tbsp vegetable oil in a large frying pan or wok. Empty the pack into the pan with 1 large chopped onion and fry gently until the onion is soft and translucent. Fold in the potatoes or vegetables and stir well till combined or till the vegetables are cooked. Season and finish with lemon juice, chopped tomato and coriander.

Rafi's Bhakia Pack (Medium) - You will need 1 large onion, 125ml water.  Empty pack into a large mixing bowl with one finely sliced onion (or other grated/sliced veg) and season. Gradually add 125ml water, mixing it well until the batter is smooth and thick (no need to use all the water). Drop tablespoons of the mixture into medium-hot oil and fry until golden brown. Drain, place on kitchen paper, and serve.

Rafi's Mushroom Bhajee Pack (Medium) - You will need 600g mushrooms, 300ml water, 2 tbsp tomato puree, optional garnish fresh coriander.  Roast 600g mushrooms in a little oil for 20 minutes and keep aside. Empty the pack into a pan with 300ml water and 2 tbsp tomato puree. Simmer for 5 - 7 minutes or until the sauce thickens. Add the mushrooms and mix well. Season and garnish with coriander.

Rafi's Tarka Dhal Pack (Mild) - You will need 350ml water, 2 tbsp oil, 2 cloves of garlic, optional garnish fresh coriander and lemon juice to taste.  Empty the lentils and powders sachet into a pan with 350ml water. Bring to the boil, cover and simmer until the lentils are soft and the water has evaporated (40 minutes approx) Do not lift the lid. Mash the lentils with a spoon and add boiling water to reach a thick, gravy-like consistency. Fry spices sachet in 2 tbsp oil for 2 minutes, then add 2 sliced cloves of garlic and fry until garlic is golden. Add to the lentils, stir and cover. Season well and garnish with coriander and lemon juice.

Rafi's Carrot Salad Spice Blend (Mild) - You will need 250g carrots, 1 tbsp lemon juice, 1 tsp sugar, 1 tbsp oil, garnich with fresh coriander.  Mix together 350g grated carrot, 1 tbsp lemon juice, 1 tsp caster sugar and a pinch of salt. Heat 1 tbsp oil in a small saucepan over a medium heat, add the sachet of seeds, then cover and shake the pan til the seeds start to pop. Add the turmeric, remove the pan from the heat and pour the spices over the carrots. Cover and leave for 30 minutes. Garnish with coriander leaves just before serving.
