Nana Lil's Mincement Fruit Cake

NANA LIL'S MINCEMEAT FRUIT CAKE

Cook Time: 1 Hour
INGREDIENTS
225g self-raising flour
125g soft margerine
125g caster suagr
450g mincemeat
3 eggs, beaten
100g dried fruit
METHOD
- Preheat the oven at 170°C / fan 150°C/ gas mark 4
- Cream the soft margarine and sugar together before adding the fruit and mincemeat.
- Add 1 beaten egg to the cake mix with a spoonful of flour and mix well. Repeat with the remaining eggs.
- Mix in the rest of the flour until everything is combined.
- Pour the batter into a greased and lined loaf tin and bake for 1 hour.
- Check if the cake is cooked with a tooth pick. If it comes out clean it’s ready. If not, place back in the oven, checking regularly with the toothpick until it’s ready.
