RECIPE

MINCEMEAT CINNAMON BUN TRAY BAKE

Cook Time: 25 Minutes

INGREDIENTS

275ml milk

7g dried activated yeast

500g strong bread flour

1tsp salt

50g caster sugar

75g butter, softened

250g sweet mincemeat

1 egg, beaten

1tbsp golden caster sugar

1tsp cinnamon

1 tbsp vegetable oil, to grease

To Garnish

2tbsp icing sugar

½ lemon, juice only

 

 

METHOD

  1. Warm the milk to 38°C and add the yeast, stir until totally dissolved.

  2. In a mixing bowl, bring the flour, salt, caster sugar, and milk mix together to form a dough, then knead on a clean surface for 5 minutes until smooth and elastic. You can use a stand mixer with a dough hook instead of hand mixing.

  3. Add the soft butter and continue to knead until all incorporated.

  4. Grease the mixing bowl with a little oil and place the dough back in.

  5. Cover with a clean damp cloth and prove for 1 hour in a warm area until doubled in size.

  6. Turn out the dough onto a lightly floured surface and roll into a rectangle of approximately 20cm x 30cm.

  7. Evenly spread the mincemeat onto the dough and roll into a pinwheel. Cut into 6 even sized slices and place cut side down into a greased rectangular brownie tin.

  8. Loosely cover with cling film and allow to double in size for 1 hour.

  9. Preheat the oven to 190°c/170°c Fan/374°F/Gas Mark 4.

  10. Carefully brush with beaten egg and sprinkle with golden caster sugar and cinnamon.

  11. Bake in the oven for 25 minutes and allow to cool.

  12. Mix the icing sugar and lemon juice to drizzle on top.

  13. Serve with whipped cream or any leftover brandy butter
