Mutton has enjoyed a real renaissance in recent years. Mutton has real depth of flavour compared to Lamb. The texture is firmer than Lamb but not tough. This selection box contains all the different cuts from a complete side of Lamb. Contains 2 x 1.4kg shoulder joints boned and rolled, 2 x 1.5kg mutton leg roasting joints, 16 x mutton chops (please note that the quantity may vary dependent on weight), mutton breast boned and rolled, 600g sliced mutton neck.

Preparation & Use
Cooking Instructions: Shoulder Joint - Remove the Mutton from the fridge and allow to reach room temperature. Season the Mutton with Salt and Pepper on all sides. Roast for 20 minutes at 220c (200c fan),then turn the oven down to 160c (140c fan). Cook for 20 minutes per 450g. Rest the meat for 30 minutes covered on a warm plate. Mutton Leg Roasting Joint - Remove the Mutton from the fridge and allow to reach room temperature. Season the Mutton with Salt and Pepper on all sides. Roast for 20 minutes at 220c (200c fan),then turn the oven down to 160c (140c fan). Cook for 20 minutes per 450g. Rest the meat for 30 minutes covered on a warm plate. Mutton Chops - Remove from packaging and leave to reach room temperature. Season the chops on both sides. Heat a heavy frying pan or griddle pan to a medium high heat. Fry the chops turning regulary until cooked. 5 minutes each side will be medium rare. Mutton Breast - Best slow cooked / pot roasted. Pre heat oven to 140c. Season Mutton with salt & pepper. Place in a deep oven proof dish or roasting tin. Half cover with beef stock. (some chopped root vegatables can be added at this stage). Cook in the oven for three to four hours until very tender. Mutton Neck - Heat a little oil in a large pan until hot and brown the mutton slices for 2-3 minutes, turning occasionally. Transfer to a casserole dish. Add your preferred vegetables and stock to casserole dish and cover. Place in the centre of pre-heated oven for 2 hours 30 minutes until tender.
