Grilled Brie and Cranberry Panettone Toastie

GRILLED BRIE AND CRANBERRY PANETTONE TOASTIE

Cook Time: 25 Minutes

INGREDIENTS

Drizzle of oil

1 red onion, finely sliced 

1 tbsp red wine vinegar 

1 tsp brown sugar 

1tsp Dijon mustard 

1 tsp butter 

2 tbsp cranberry sauce 

1 orange, zest only 

4 slices panettone 

200g brie 

 

 

METHOD

  1. Heat oil in a pan and cook the onions for approximately 5 minutes until translucent.
  2. Add the red wine vinegar, sugar, mustard and butter to the pan and cook for a further 10 minutes.
  3. Add the cranberry sauce and cook for a further 2-3 minutes. Add the orange zest and remove from the heat.
  4. Heat a dry griddle pan and add 2 slices of panettone.
  5. Place slices of brie on top dividing equally between the two slices.
  6. Spoon the caramelised cranberry onions on and place the other slices of panettone on top.
  7. Cook for 2-3 minutes each side and serve warm.

Great way of using leftover Panettone!
