1. Remove the venison steaks from their outer box, and using a pair of scissors snip open the inner plastic bag.
2. Drain away and dispose of the sous-vide/ cooking liquid.
3. Pat the steaks dry with a kitchen towel. We advise seasoning each side of the steaks with salt and pepper.
4. Take a frying pan, add a knob of butter or a table spoon of cooking oil and allow to heat to a medium temperature.
5. Place the venison steaks in the pan and sear for 2 - 3 minutes on one side.
6. Turn the steaks over, and sear the reverse side for 2 minutes.
7. In the last minute, place your butter medallions either in the base of the pan (to melt), or atop the steaks to finish.
8. Allow your steaks to rest for a couple of minutes before serving.
