This succulent loin of Christmas pork is French trimmed and stuffed with pork and apple sausage meat stuffing. This infuses the centrepiece with a fruity & festive flavour to complement the savoury quality of the free range pork, with notes of rosemary, pepper, coriander and nutmeg. The French trimming of the rib makes for an easy carve and eye-catching finish, with a rib per serving and the essential crackling.

Preparation & Use
Cooking Instructions: Remove the joint from the refrigerator and scald the rind by pouring over a full kettle of boiling water onto the skin over a clean sink with the pork resting on a wire tray, pat dry then season with fine sea salt and leave to air dry for a couple of hours or overnight in the fridge, uncovered. Preheat your oven to 210°C or 230°C without a fan (Gas Mark 8). Place the pork fat side up and roast for 20 minutes. Reduce the temperature to 160°C fan assisted or 180°C without a fan (Gas Mark 4) and continue roasting for 20 minutes per 500g reaching a core temperature of 65°C before resting. To finish, increase the oven temperature to 210°C fan assisted or 230°C without a fan (Gas Mark 8) and continue roasting for an additional 15 minutes to crisp the crackling. Leave to rest for a minimum of 30 minutes in a warm place uncovered before carving.
