Pan-roasted skin on Cumbrian chicken breast, served with Lancashire kale and onions in a Longley Farm cream sauce, caramelised organic British carrots and a panko yeast crumb. Finished with lemon thyme infused oil made by Simon Rogan’s team of chefs in Cumbria.

340g Cumbrian Chicken Breast, 3 x Organic Carrots, 150ml Longley Farm Double Cream (MILK) , 1 x Brown Onion,  125g Lancashire Kale, 15ml Bottle Simon Rogan Lemon Thyme Oil, 10g Nutritional Yeast, 10g Panko Breadcrumbs (WHEAT Flour, Yeast, Salt).

Preparation & Use
Cooking Instructions:

1 Preheat oven to 200°C / Fan 180°C / Gas Mark 6. Cut the carrots in half lengthways. Peel and finely dice the onion. Remove the kale leaves from the stalk and roughly chop the leaves.

2 Add the carrots to a pan of cold water, bring to a boil, reduce the heat and allow to simmer for 4-5 minutes to soften, drain, season with salt and set to one side.

3 Season the Cumbrian skin on chicken with a pinch of salt and black pepper. Add 1tsp of oil to a frying pan on a medium to high heat, when the oil is hot place the chicken skin side down to sear for 4 minutes until golden brown, turn over and sear for 1 more minute.

4 Move the chicken onto a suitable baking tray skin side up and place in a pre-heated oven uncovered for 15-20 minutes until cooked through. Allow to rest for 5 minutes.

5 Meanwhile heat 1tsp of oil in a second frying pan on a medium heat, add the onion and soften for 4-5 minutes until slightly browned. Add the kale and stir for 2 minutes until wilted. Turn the heat low and add the pot of cream, reduce until it’s thick and the kale is coated, this should take about 3 minutes. Turn off the heat and sit to one side.

6 Add 1tsp of oil to the frying pan you used for the chicken, heat to medium-high. When the oil is hot, place the carrots into the frying pan flat side down and fr y gently for 5 minutes, turn a few times until caramelised, set aside on a plate.

7 Add the panko breadcrumbs and yeast to the same frying pan used for the chicken and carrots, toast for 30 seconds to 1 minute and shake the pan well. Remove from the pan and place in a bowl. Place serving plates into the warm oven for 1-2 minutes.

8 Re-warm the creamed kale for 30 seconds. Slice the chicken breast, then place half of the creamed kale onto a plate, top with the chicken breast slices skin side up. Add 3 carrot fingers to the side as per picture. Spoon the yeast crumb over the chicken breast and then drizzle the lemon thyme oil around each plate.
