Small-scale Bolton-based supplier, Happy Belly, was founded by Brendan Baury and his love of good food. Armed with a passion for hand-crafting flavourful scotch eggs using locally sourced ingredients, Brendan’s business began from his kitchen table back in 2011. Spending every minute of every day perfecting his now much-loved range of Scotch eggs, Brendan soon decided it was time to see what people thought of his innovative creations. He began showcasing his soft yolk scotch eggs at local farmers markets and was inundated with positive feedback. Inspired by such a warm reception, Brendan found new ways to build his business and soon started to supply local farm shops and delis over the two years that followed. Soon enough, much to his wife’s delight, he had outgrown their home kitchen and moved into a purpose built, production kitchen where the business has grown steadily ever since. Brendan’s goal was to take the humble Scotch egg to new heights and create a product that was head and shoulders above the rest and I’m sure you’ll agree in saying he’s achieved just that.
