Christmas Leftover Spring Rolls

CHRISTMAS LEFTOVER SPRING ROLLS

INGREDIENTS
50g salted butter, melted
100g leftover cooked turkey
75g leftover cooked carrots
75g leftover cooked Brussel sprouts
75g leftover cooked parsnips
100g leftover cooked potatoes
100ml leftover cooked gravy
4 sheets filo pastry
50g salted butter, melted
For the bourbon and maple cranberry dipping sauce
4tbsp cranberry sauce
15ml bourbon
1 tbsp maple syrup
1 orange, zest only
METHOD
- Preheat oven to 180°C/160°Fan/356°F/Gas Mark 4.
- Shred the leftover cooked turkey and slice the leftover cooked vegetables into batons.
- Put into a bowl and mix with any leftover gravy to coat the vegetables and turkey.
- Cut each filo pastry sheet into 4 rectangles, approximately 15cm x 12cm.
- Place a spoonful of the vegetable and turkey mix at one end of a filo rectangle in the centre. Roll the filo over the veg until halfway along the filo sheet, then fold each side of unfilled pastry into the centre. Continue rolling into a cylinder and brush with butter to seal.
- Repeat with the remaining pastry sheets, then place on a baking tray and brush with butter.
- Bake for 15-20 minutes until golden brown.
- Whilst the spring rolls are baking, make the cranberry dipping sauce by mixing the cranberry sauce, bourbon, maple syrup and orange zest.
- Remove the spring rolls from the oven and serve with the cranberry dipping sauce.
CHEF'S TIP
This is a great way to use Christmas dinner leftovers. Any type of leftovers work for this.
