Candied Fruit Ice Cream Bombe

CANDIED FRUIT ICE CREAM BOMBE

INGREDIENTS
75g milk chocolate
250g vanilla ice cream
50g mixed peel
250g salted caramel ice cream
250g chocolate ice cream
4 Booths mini chocolate brownie bites, crumbled
To Garnish
Chocolate shavings
1 tbsp salted caramel sauce
METHOD
- Melt the chocolate in a bowl over a saucepan of simmering water until it is fully melted.
- Allow the ice cream to sit at room temperature for 15 minutes to soften. Mix the vanilla ice cream and the mixed peel and press into a 2lb small round bottomed bowl, brush with a little melted chocolate and place in the freezer to fully set.
- Remove from the freezer and press the salted caramel ice cream into the bowl to form the next layer.
- Brush with the remaining melted chocolate and place back into the freezer.
- Mix the chocolate ice cream and the crumbled chocolate brownies and press into the bowl for the final layer.
- Keep in the freezer until ready to serve.
- Remove from the freezer and garnish with salted caramel sauce and chocolate shavings.
CHEF'S TIP
This can be made up to 1 month in advance. Once you remove from the freezer allow 20 minutes to soften before you serve.
