Preparation & Use
OVEN Preheat oven to 190C, Fan 170C, Gas Mark 5. Remove all packaging.
Remove from fridge 20 minutes before cooking. Place in a roasting tray, season to taste, cover with foil and cook in the middle of the oven for 55 minutes per kg plus 30 minutes. If you prefer a medium or rare joint, reduce the cooking time.
Baste occasionally. Remove foil 10 minutes before the end of cooking. Allow to stand for 10 minutes before carving.
Ensure food is piping hot throughout before serving and the juices run clear.
