Preparation & Use
Cooking Instructions:

750g: Remove the cushion from the fridge 30 minutes before cooking. Pre-heat oven to 190ºC (180ºC for fan assisted ovens) / 375F / Gas Mark 5. Remove all packaging, place in a roasting tin, season and cover loosely with foil. Roast for approximately 80 minutes, basting occasionally. 10 minutes before the end, remove the foil and return to the oven until the juices at the thickest part run clear or the center reaches 75ºC. Allow to rest at room temperature, loosely covered with foil, for 10 minutes. Relax, carve and enjoy!!

1.4kg:  Remove from the fridge 30 minutes before cooking. Remove all packaging. Preheat oven to 190ºC / Fan 180ºC / Gas Mark 5. Place in a deep roasting tray, season to taste and cover with foil. Cook in the oven for 1 hour 40 minutes. Remove foil 30 minutes before the end of cooking. Cover with foil and allow to rest for 10 minutes before carving. Ensure food is piping hot throughout before serving and the juices run clear when the thickest part is pierced with a skewer. Booths recommend that all meat products are thoroughly cooked.
