Preparation & Use
Cooking Instructions:
Remove Pork Belly joint from the bag and air dry overnight in the fridge on a suitable roasting tray. Remove from fridge 30 minutes before cooking, patting dry. Preheat oven to 240°C / 220°C Fan / Gas Mark 9. Rub skin with oil and season the skin liberally with Sea Salt. Place in the oven on the middle shelf for 20 minutes. Drop the temperature to 200°C / 180°C Fan / Gas Mark 6 and bake for 90 minutes. 10 minutes before the end of the cooking time, increase the temperature back up to 240°C / 220°C Fan / Gas Mark 9 until the skin has blistered and crispy crackling is formed. Rest for 20 minutes before carving for best results. Cooking instructions are a guide only. All appliances vary.
