All appliances vary, the following are guidelines only. Do not wash raw poultry. Wash hands after handling raw poultry. Not suitable for cooking from frozen.
Oven: Preheat oven to 180°C / Fan 160°C / Gas Mark 4. Remove packaging and the giblets from the body cavity. Allow the bird to reach room temperature before cooking, this should take approximately 2 hours. Place the bird upside down in a large roasting tray to allow the juices to run into the breast of the bird, keeping it moist. There is no need to cover with foil. Place in the middle of the oven and cook for 2 hours for 4.00-4.99kg. Half an hour before the end, turn the bird over to allow the breast skin to brown and season with salt and pepper. Check the bird every 10 minutes until thigh juices run clear. Once cooked allow the bird to rest for 15-60 minutes. Whilst the bird is resting, pour the juices into a saucepan and allow to cool. Skim the fat off the top, simply reheat and stir in 2 tablespoons of flour to thicken, if required, for a delicious gravy. Ensure food is piping hot throughout before serving and the juices run clear when the thickest part is pierced with a skewer. Booths recommend that all meat products are thoroughly cooked.
