Oven: All appliances vary, the following are guidelines only. Pan fry then oven roast. Preheat oven to 200°C / Fan 180°C / Gas Mark 6. Remove from fridge 30 minutes before cooking. Remove from packaging keeping the sachet separate. Rub lamb rack with oil and season with salt. Place fat side down in a frying pan and render the fat for 5-6 minutes over a medium/high heat. Flip over and brown the meat for 1-2 minutes, add in a knob of butter and baste for 2 more minutes adding in the rosemary sprig for extra flavour. Remove the racks and place onto a suitable baking tray and bake for:
Rare - 10-12 minutes
Medium - 16-18 minutes
Well Done - 22-25 minutes
Rest for 10-15 minutes in foil before serving. Heat the sachet in a saucepan until hot then pour it over the lamb Ensure that meat juices run clear and the food is piping hot throughout before serving. Booths recommend that all meat products are thoroughly cooked.
