Ready to Cook: YesAll appliances vary, the following are guidelines only. Remove from fridge 30 minutes before cooking.
Oven: Preheat oven to 220°C / Fan 200°C / Gas Mark 7. Remove all packaging. Place in a roasting tray in the middle of the oven and cook for 30 minutes. Reduce the temperature to 200°C / Fan 180°C / Gas Mark 6 and cook for a further 2½ hours. Remove from oven, wrap in foil and allow to rest for 30 minutes. Ensure that meat juices run clear and the food is piping hot throughout before serving. Booths recommend that all meat products are thoroughly cooked.
