All appliances vary, the following are guidelines only. Do not wash raw poultry. Wash hands after handling raw poultry. Not suitable for cooking from frozen.
Oven: Preheat oven to 190°C / Fan 170°C / Gas Mark 5. Remove all packaging, place in a large roasting tin and season with salt and pepper. Leave to settle for at least an hour at room temperature. Calculate cooking time allowing 25 minutes per 500g. Loosely cover with aluminium foil. Roast the crown for the calculated time basting occasionally with the pan juices. 20 minutes before the end, remove the aluminium foil and continue to cook until the skin becomes crispy. Allow to rest for at least 15 minutes before carving. Ensure food is piping hot throughout before serving and the juices run clear when the thickest part is pierced with a skewer. Booths recommend that all meat products are thoroughly cooked.
