Oven: All appliances vary, the following are guidelines only. Pre-heat oven to 220°C / 200°C / Gas Mark 7. Remove from fridge 30 minutes before cooking. Remove all packaging and pat dry with kitchen paper. Season with salt and pepper. Place on the middle shelf of the oven for:
Rare - 20 Mins @ 200°C then 60 minutes @ 180°C
Medium - 20 Mins @ 200°C then 85 minutes @ 180°C
Well Done - 20 mins @ 200°C then 110 Minutes @ 180°C
Rest in foil for 20 minutes before carving. Booths recommend that all meat products are thoroughly cooked.
