Preparation & Use
Cooking Instructions:
Remove your duck from the refrigerator at least 30 minutes before cooking. Ensure all packaging is removed. Preheat the oven to 200°C / Fan 180°C / Gas Mark 6. The duck will require cooking for 40 minutes per kg plus 10 minutes extra (as a guideline). Pat the skin of the duck with kitchen towel to remove any excess moisture. Prick the skin around the duck legs. Season the duck with salt and pepper. Place in a tin, on a rack in the middle of the oven and cook for the appropriate length of time. After removing the duck from the oven, allow to rest for 10 - 20 minutes before carving.
